Mexican Shrimp Cocktail w/Avocado salsa
- 2- Avocados chunked (bite size)
- 2- cucumbers peeled, seeded and diced
- 6 cups of Spicy V8 Vegetable juice
- 1 pound large cooked shrimp, peeled, de-veined and thawed (in cold water)
- ½ bunch of cilantro chopped
- 1 Medium red onion chopped
- Lime wedges to serve
Drain and pat dry the shrimp, mix everything together. Chill and serve in Margarita glasses.
