Crocktoberfest: Listener Lori’s Chicken Fajita Dip

Crocktoberfest rolls on today with a recipe sent in from Listener Lori! Try this Chicken Fajita Dip at your next get together – or at home with the family!

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 12oz bag frozen three pepper and onion blend
  • 1 packet Fajita seasoning
  • 8 oz cream cheese (I use reduced fat)
  • ½ c sour cream (I use fat free)
  • ½ c shredded Mexican or taco flavored cheese

Preparation

  1. Cube raw chicken
  2. Cook chicken and frozen peppers/onion in a skillet sauce pan until chicken is cooked through, drain and return to pan
  3. Chop chicken and peppers to desired size
  4. Add packet of fajita seasoning and mix
  5. Add cream cheese, sour cream and heat through
  6. Add cheese, stir and heat until melted
  7. Transfer to small crock pot and serve with tortilla chips
