This is a great summer dish, it’s light and delicious. I made this last night and Alan couldn’t get enough of it. As usual it’s easy to make and there’s nothing here that you can’t find at your local grocery store.

I should be embarrassed at how easy my recipes are. I try not to get stuck in a rut of making the same dinners, which is easy to do. Your kids like tacos, so once a week it’s ‘taco night’ then spaghetti, hamburgers, pizza, etc. Making something the kids will eat is the ultimate goal, a variety of foods is always nice.
My husband read a story about a month ago about a Chinese restaurant and now he refuses to eat Chinese food from a restaurant. I love Chinese food! So, I’ve been making it myself.
I don’t have the patience to measure or weigh my food, when I’m cooking I’m tossing this, that and the other into the pots and pans as my boys echo in the background how hungry they are and incessantly ask “when’s dinner gonna be ready?” Here’s Melanie’s weekly tip that will help make serving sizes ‘that much easier’:
